Coco and Peanut Butter Oats

One day my co-worker walks in with a mason jar with what looked like lumpy goo. As I asked he informed me it was Overnight oats. The other day I had a flash back of this conversation and went to my handy dandy Pinterest and picked three recipes to try. I made my list and headed to the super market (which I hate but I was determined and cheap.)

The first receipt I tried was Coco and Peanut Butter Overnight Oats

1/3 cup plain Greek yogurt

1/2 cup rolled oats

2/3 cup unsweetened milk of choice

1 tablespoon chia seeds or flax seed

1/2 teaspoon vanilla extract

2 tablespoons peanut butter

2 tablespoons unsweetened cocoa powder

Pinch of salt

0-2 tablespoons honey or maple syrup

My first try I used

Unsweetened Almond Milk

1 tablespoon honey

I tolerated it. I did not love it. It was actually super biter. I used original coco and also just one table spoon of honey. Next time I will use either 2 tablespoons of honey or maple syrup. But it did fill me up for much longer than scrambled eggs and I felt so adult that I was able to actually follow through!

Tomorrow will be my Apple Sauce cinnamon experience!
